Blueberry OPOPsicles

I never met anyone who didn’t like blueberries…ok I have….I just never understood them:) 

This summer my friends and I went Berry Picking out in Long Island, and just the drive alone out there screamed summer. The beautiful warm weather, driving along these big open roads, and the fields of berries that were awaiting us were such #goodvibes. At first it was a bit tricky to find berries ripe enough, but we finally got the hang of it and picked out a nice amount to fill up a few containers! 

When I got home I was thinking what can I do with these berries…what magic transformation can I give them? And then it hit me! Popsicles! It’s a perfect summer treat and utilizes the berries in such a great way. Paired alongside a layer of coconut cream was just the perfect combination.

These popsicles are super easy to make, are non-dairy, and I might be making these all year ‘round…just sayin’.

Blueberry OPOPsicles

 

Popsicles! It’s a perfect summer treat and utilizes the berries in such a great way. Paired alongside a layer of coconut cream was just the perfect combination.

  • Cook Time: 4 hours 30 minutes
  • Total Time: 4 hours 40 minutes

Ingredients

Scale

Cream Layer

  • 1 can Coconut Cream (we used Trader Joe’s brand)
  • ½ tbsp Vanilla Extract
  • ½ tbsp Honey

 

Blueberry Layer

  • 1 ½ cups fresh or frozen Blueberries
  • Drizzle of Honey
  • Pinch of Cinnamon
  • ¼ cup of Water

 

 

Instructions

  • Mix all of the Cream Layer ingredients together and set aside
  • Blend all of the Blueberry layer ingredients together until its a puree consistency (if its too thick add more water)
  • Take popsicle molds and spoon in cream layer first about half way up the molds
  • Freeze for 15-20 minutes until solid enough not to completely mix with the blueberry layer
  • Layer on the puree and stick in the mold sticks and freeze until fully set (about 4 hours)
