Comforting Chicken and Biscuits

Welcome to raw freezing January y’all. If you know me, you know I am a warm weather girl all the way. Give me a beach and an iced coffee, and I am good to go. So what does a girl like me do in weather like this? Cry! No, just kidding!! My strategy for surviving the cold involves a few things: warm cozy sweaters, fleece-lined leggings, hot water bottles, and of course, hot yummy comfort food like this delicious comforting chicken and biscuits recipe!

My ideal comfort foods are hearty, warming, stick your ribs type recipes. This one is a little lighter but still amazing. Taking the traditional idea of a pot pie and mixing it with the very southern biscuit is a combination made in heaven. My comforting chicken and biscuits recipe cooks the biscuits with the filling, but you can also cook the filling and biscuits separately and eat them together.

Another big positive about this dish is that it’s a one-and-done dinner! Comforting chicken and biscuits have everything you need for a balanced dinner – protein, starch, and vegetables. Also, it uses that bag of mixed vegetables you have in the back of your freezer – come on, we all have one! You can also switch out the vegetables to use whatever you have in your freezer. As long as the amount is the same, the veggies should work. I think kale would be an amazing addition or substitution for this recipe.

Tips and Tricks

Do you remember all the chicken soup chicken you have laying around that your family refuses to eat after shabbos? Well, worry no longer as that would work excellently in this recipe. You can also skip the biscuit topping if you are looking to go even easier, lay one sheet of puff pastry over the top, and voila, instant topping!

Comforting Chicken and Biscuits

My comforting chicken and biscuits recipe cooks the biscuits with the filling, but you can also cook the filling and biscuits separately and eat them together.

Ingredients

Filling

1/4 cup oil

1 lb.frozen mixed vegetables

1/4 cup flour

1 tsp onion powder

1/2 tsp thyme

2 tsp parsley 

4  cups chicken broth

2 packed cups cooked shredded chicken

Biscuit Topping

2 cups flour

1 cup buttermilk (1 cup pareve milk + 1 tsp lemon juice)

1 tsp baking powder

1/2 c margarine

1 tsp salt

Instructions

Heat medium-sized deep pan over medium/high flame 

Add veggies and sauce until heated through – about 5-6 minutes.

Add flour and spices and lower the flame to medium/low.

Keep stirring and sauté until the veggies almost fry and the flour is golden, about 4-5 minutes.

Add chicken and broth and stir, making sure to scrape the bottom and get all the yummy bits up (this is called deglazing the pan) 

Let the mixture simmer uncovered over a medium/low flame for 15-20 minutes or until the mixture thickens.

 

For the biscuits (while the filling simmers.)

Mix all the dry ingredients in a medium bowl.

Add margarine and mix by hand until you have a dry, crumbly mixture.

Add liquids and mix until just combined.

 

Pour filling into a 9×13 baking dish.

Spoon dough top in medium size mounds. The mounds shouldn’t cover the whole top. It should be like blobs of biscuit dough all over. 

Bake at 350 for 30 mins

Notes

This recipe is a great way to use your leftover boiled chicken from a pot of chicken soup!

You can also lay a sheet of puff pastry over the filling and use that as a topping. Bake for 30 minutes or until the puff pastry is golden brown.
