Fruity Jam Oatmeal Bars

I am in love….with these Fruity Jam Oatmeal bars:)

Breakfast could sometimes be extremely boring, with the same old same old…which is why it’s time to switch it up! These beauties are great for on the go, or just when your at home and want something different. The bars are a combo of oatmeal and your favorite jam (s), and between you and me can easily feel and pass as a dessert…but who’s complaining. Nope not me.

With TuB’Shvat right around the corner, this recipe is perfect, as you can easily incorporate your favorite dried fruits. Pair up your fave dried fruits with their sister jams, or mix and combine, orrr just use ol’ delicious jam.

Raspberry Jam ones:)

For this recipe I divided the batch and used half with Raspberry jam (my favee) and the other with Apricot jam. A buttery moist bottom, with a fruity sweet jam in the middle, and finally topped with a cinnamony (is that a word?- now it is…:) crumble on top.

Fruity Jam Oatmeal Bars

Ingredients

Scale

1 cup flour

1 cup quick cooking oats

dash of salt

3/4 teaspoon baking soda

1/2 cup *coconut sugar

1 teaspoon vanilla’

1/2 cup butter/margarine melted

*Your favorite jam (around 3/4 cup)

Crumble

1/2 cup flour

1/2 cup quick cooking oats

1/2 cup *coconut sugar (even less- depending how sweet you like it)

1/4 teaspoon cinnamon

dash of salt

1/4 cup of oil (any neutral oil like canola etc)

Instructions

Preheat oven to 350 degrees

For the bottom layer- combine melted butter, sugar and vanilla together. Mix for about 1-2 minutes, and set aside. Combine all the dry ingredients and pour in the wet mixture. Set aside

For crumble- combine all dry ingredients until it becomes a crumbly mixture  (depending on the amount of sugar you use,  will be how dark the crumble itself will look)

Grease an 8×8 pan, pour in the mixture and give it a good pat down. Then spread the jam on top, and lastly the crumble.

Bake for 15-20 minutes, insert a toothpick, when it comes out clean it’s ready. Let it cool for a few minutes before cutting into them. 

Notes

*coconut sugar can be replaced with brown sugar

*I used a sugar free jam, but feel free to use any one you like or have on hand!

*If you want to incorporate dried fruits-add them to the crumble before baking
