Nectarine & Kale Salad With Raspberry Vinaigrette

When I think of this Nectarine & Kale Salad, I think of summer and this salad screams last licks of summer. Just picture it- melting ice cream, lazing in a hammock, cannonballs in the pool – all the things we love about those warm months. 

My best summer memories are the years I stayed home with my mother and had “Camp Mommy”. I spent long lazy days in the pool and barbecued almost every night. My mother made sure I had plenty to do with art projects, sports with my siblings, and even fun field trips. As a result these summers became some of my most cherished memories.

Summer means a release from responsibilities. Easy recipes and light food. I know personally I crave salad a lot more in the summer. This salad is like an ode to summer that you can have year round. 

Kale Time!

Let’s talk about the rest of the salad. Mainly the kale part of nectarine & kale salad. Kale may seem like something only veggie lovers would eat. However, I have news for you! Kale is for all! One thing you must make sure to do is massage the kale if you are going to eat it raw.

Now, I know that sounds weird. Why massage the kale? I feel like I need a massage more than the kale does! In addition to the fact that its fun, massaging the kale will take away some of the bitterness. Also, you get a good hand workout – just kidding. But, in all seriousness a little bit of greens won’t “kale” you.

This is a super easy super delicious recipe that should grace your table ASAP! It’s good for all year round and especially if you craving the little patch of sunshine that is summer. Make it eat it and enjoy!

Nectarine & Kale Salad

This fresh salad tastes like a bite a summer with juicy nectarines and a tart raspberry vinaigrette.

Ingredients

Scale

Salad

  • 3 cups Kale
  • 2 small or 1 medium Nectarine
  • 1/2 cup slivered Almonds

Dressing

  • 2 heaping tbsp. Sugar Free Raspberry Jam
  • 1 small pinch of Salt
  • 4 tbsp. Canola Oil
  • 4 tsp. Granulated Sugar
  • 2 tbsp. White Vinegar

Instructions

  • Place almonds in a non-stick pan over medium heat
  • Stir constantly until the almonds are golden brown and toasted then set aside to cool
  • Remove the pit from the nectarine(s)and slice thinly
  • In a small bowl mix all the dressing ingredients with a whisk until well combined
  • Put the kale, nectarine(s), and almonds in a large bowl with room to toss the salad
  • Pour the dressing over the salad and toss until all of the components are well coated

Notes

You can substitute the Canola oil for a neutral oil of your choice

The white vinegar can be substituted with the vinegar of your choice. We have tried Red Wine Vinegar and Apple Cider Vinegar and both have come out delicious! 

You can use regular Raspberry Jam and reduce the amount of sugar to 2 tsp.
