Nectarine & Kale Salad

kale and nectarine salad with raspberry vinagrette

This fresh salad tastes like a bite a summer with juicy nectarines and a tart raspberry vinaigrette. 

Ingredients

Scale

Salad

  • 3 cups Kale
  • 2 small or 1 medium Nectarine
  • 1/2 cup slivered Almonds

Dressing

  • 2 heaping tbsp. Sugar Free Raspberry Jam
  • 1 small pinch of Salt
  • 4 tbsp. Canola Oil
  • 4 tsp. Granulated Sugar
  • 2 tbsp. White Vinegar

Instructions

  • Place almonds in a non-stick pan over medium heat
  • Stir constantly until the almonds are golden brown and toasted then set aside to cool
  • Remove the pit from the nectarine(s)and slice thinly
  • In a small bowl mix all the dressing ingredients with a whisk until well combined
  • Put the kale, nectarine(s), and almonds in a large bowl with room to toss the salad
  • Pour the dressing over the salad and toss until all of the components are well coated

Notes

You can substitute the Canola oil for a neutral oil of your choice

The white vinegar can be substituted with the vinegar of your choice. We have tried Red Wine Vinegar and Apple Cider Vinegar and both have come out delicious! 

You can use regular Raspberry Jam and reduce the amount of sugar to 2 tsp.
