Spiked Watermelon Slushy

Watermelon. Sugar. High! This spiked watermelon slushy will get you in that summer vibe very quickly. With a refreshing blend of watermelon, mint, and lime this drink is the perfect addition to your poolside lounging.

Everyone knows that Memorial Day weekend is the official start of summer. The weather is warm, the kids are ready for school to be out, the grills are going, and for those fashionistas, white in back in season. This drink provides a welcome cool relief in the warm weather. And, it can also be made in large batches so there is plenty to go around!

Starting with the basic flavors of a good mojito we added some watermelon to change it up and made it into a blended slushy drink. However, Beware! This spiked watermelon slushy is sweet and very easy to drink. Some of my taste testers said that the alcohol was not that present making them sneakily dangerous. Therefore, for those who like an extra kick feel free to add another 1/4 cup of rum. But, your slushy will be a slightly looser consistency. These can also be made as virgin drinks! Just substitute the rum for some tonic water.

You can also freeze the blended slushy and it leaves you with delicious ices. Remove from the freezer fifteen minutes before serving to allow it to soften. Then serve in a shallow bowl and garnish with some fresh mint. It is super easy to put together and it looks beautiful with the contrasting colors.

Ingredients

Scale

4 cups finely cubed watermelon frozen 

1/2 cup rum

A handful of mint (812 leaves)

2 tbsp simple syrup* recipe in notes below 

1 tbsp lime juice

Instructions

Combine all ingredients in a high-powered blender or food processor until smooth. Serve immediately in a cold tall glass with a straw. 

Notes

Simple Syrup

1/2 cup water

1/2 cup sugar

Put the two ingredients into a small pot and place it on the stove over medium heat. Stir to combine and wait for the sugar to dissolve for about 5 minutes or so. Use to sweeten any iced drink to avoid the graininess of undissolved sugar
