Super Greens Soup

I don’t know about you but as the weather has gotten colder all I want is cozy sweaters, fuzzy socks, and lots of soup. I am one of those always cold people and soup is the food that keeps us going all winter long. It can be anything from instant ramen to hearty homemade veggie soups – I will eat them all!

Soup is also a great cure all for anything that ails you. And this soup will help with quite a few ailments. Jalapeños, spinach, and broccoli all have lots of vitamin c to help boost your immune system which is especially important this time of year. The spice of the jalapeño (if you choose to leave the seeds in) will help clear out clogged sinuses which is a common complaint all winter long.

Super Greens Soup

Ingredients

Scale

4 Medium Onions – diced
½ Head Fresh Garlic – peeled
1 12 oz. Bag Frozen Broccoli
1 24 oz. Bag Frozen Spinach
1 T Chicken Soup Mix
4 Cups Water
1 Jalapeno Pepper – cut in half and deseeded
½ Cup Almond Milk
Salt to taste

Instructions

Spray the pot with cooking spray and saute the onions and garlic until the onions are soft
Add the Broccoli and Spinach and saute for 5 minutes
Add the Water, Soup Mix, and Jalapeno and bring to a boil
Cover and simmer for 45 min
Using an immersion blender, blend the soup until smooth
Add the almond milk and salt to taste
